On 15.01.26, IHM Taratala Kolkata collabywith The Park Kolkata to conduct a hands-on practical workshop on Bar and Mixology for the students of the Diploma in Food & Beverage Service (Batch 2025–26). The session was coordinated by Mr. Subhankar Mondal, Faculty, IHM Kolkata, who facilitated the academic linkage between classroom learning and industry practice. The workshop provided students with an immersive exposure to professional bar operations and contemporary mixology techniques. Under expert guidance, students were introduced to essential bartending skills, beverage preparation methods, presentation styles, and the importance of balance, flavour profiling, and responsible service. This industry-led interaction enabled students to move beyond theoretical knowledge and gain valuable practical experience in a real hospitality environment. It also offered meaningful insights into current trends, service standards, and operational expectations within modern bar setups. We at IHM Taratala Kolkata are proud to announce that The Library of the Institute of Hotel Management, Taratala Kolkata has been featured in the Directory of Libraries: West Bengal which is the first of its kind in India on page 479. This Directory has been published by The Central Reference Library, which is an Indian National Bibliographic Agency in Kolkata which run under Ministry of Culture, Government of India. This Directory will serve as a comprehensive reference and guide for tourists, researchers, scholars, librarians, students and other stake holders. The Library of the IHM, Taratala Kolkata is a class leading academic library with a rich collection of hotel management books and scholarly journals. Publications brought out by the Institute are also housed in the Library and the same may be accessed by the faculty members and students of the Institute. The Institute holds Institutional Membership with the American and British Council Library of Kolkata and the faculty members and students actively participate in the events hosted by these libraries. It is fully automated and utilizes plagiarism detection software to support academic and research activities. From 23.1.26 to 25.1.26, IHM Taratala Kolkata collaborated with Fairfield by Marriott Kolkata to organise a Pop up kitchen on Asian cuisine named the Grand Asian Buffet. A team of Faculty Members and Students participated in thoroughly decorating the Kava restaurant along with additional students assisting in the service as well as bolstering the kitchen. The efforts were led by Chef Trainer Chef Samuel Labher and Chef Partho Roy who collaborated with Chef Arabinda Seth, Executive Chef Fairfield by Marriott Kolkata to curate the menu as well as culinary experiences on offer. The effort received multiple praises from guests as well as the management of Fairfield by Marriott Kolkata. On 19.1.26 students from IHM Taratala Kolkata – Mr. Aniruddh Mitra and Mr. Dibyashankar Basak (both final year B.Sc students) participated in the Prestigious PHDCCI National Young Chef competition Grand Final Round. They are current Champions from the Eastern regional round held at IHM Taratala Kolkata. For this National level competition, the students had trained under the able guidance of Chef Arijit Mitra, Chef trainer, IHM Taratala Kolkata and Chef Sandeep Pandey, from EICA and specialist in cuisine from Jharkhand. The students performer exceeding well and their efforts and talents were recognised by the Honourable Minister of Tourism, Shri Gajendra Singh Sekhawat, legendary Chef, Chef Manjit Gill and the panel of judges. The students had curated authentic Santhali dishes using local ingredients and home cooking style. On 17.1.26 IHM Taratala Kolkata hosted the Hangla Hneshel – Bengal’s Best Baker competition. The competition was judged by Chef Trainers of IHM Taratala Kolkata Chef Subhadip Saha, Chef Kritika Bose Guha and Chef Himanshu Kumar. The event was presided over by HOD Chef Ashok Kumar Prasad. While the participants were from a non culinary background, they showed excellent technical prowess in culinary skills. The chef trainers interacted with the participants about technicalities as well as their awareness on Hospitality Education. The competition was a very important interface between Hospitality Educators and local people to raise awareness about Hospitality Education under the aegis of NCHMCT and Ministry of Tourism, Government of India. On 15.1.26 IHM Taratala Kolkata celebrated Makar Sankranti which is a pan-Indian Hindu harvest festival celebrating the sun’s transition into Capricorn (Makara), marking winter’s end and the start of longer days. On 13.1.26, IHM Taratala Kolkata conducted a session on personal hygiene and grooming for ladies and gentlemen. The session was conducted for faculty members and staff of the institute.
Further to dissipate the said learnings, hoteliers from the Stadel Hotel, Kolkata were also invited to be part of the session. The Stadel Hotel has an MoU with IHM Taratala Kolkata for upgrading the hotel standards.
The facilitators included Mr. Shane Joseph, Ms. Parijat Mukherjee and Ms. Deepshikha Dolui, Senior Faculty Members of IHM Taratala Kolkata who had recently attended a workshop on the same conducted by NCHMCT Noida. The session covered tips and tricks, do and don’ts when it comes to formal dressing and professional grooming. The participants found the session very interactive and informative. The event was held under the guidance and encouragement of the Honourable Principal, Mr. Raja Sadhukhan, whose leadership strongly promotes experiential learning and meaningful industry–academia collaboration. His vision of exposing students to contemporary management thinking was clearly reflected in the successful execution of the programme. The session was conducted by Prof. Saravana Jaikumar, Associate Professor, Marketing Group, Indian Institute of Management Calcutta (IIMC), with insightful discussions on case studies and concepts of pricing decisions, strategy, market segmentation, and willingness to pay. A moderated discussion by Mr. Promit Sanyal, Faculty Member, IHM Taratala Kolkata, linked these concepts to hospitality applications, followed by an engaging student interaction. The students showed overwhelming positive feedback and appreciated the session that was organised. On 19.12.25 IHM Taratala Kolkata celebrated Reconnect to the Roots for the class of 2000 – a program commemorating 25 years of passing out of the batch of 1997-2000. The event saw the welcoming back of the students of the said batch and celebrating of their years at the institute. It celebrated friendships and bonds which are everlasting. The program saw segments of cultural performances reflecting back to the late 90s and early 2000s followed by felicitation of teachers who taught the said batch. The institute congratulated the class of 2000 in cognizance of the completion of 25 years of association with the institute. This was followed by a nostalgic lunch and property tour for the invitees. As part of its initiative to connect to Schools and society, IHM Taratala Kolkata invited students from Anubhuti school Kolkata to experience different aspects of hospitality at IHM Taratala Kolkata. The students of Anubhuti, most of whom are special children who include youth requiring extra support for conditions that affect learning, development, or daily functions, encompassing physical, intellectual, sensory (like blindness/deafness), speech, or emotional/behavioral challenges, needing tailored education and care for equal opportunities in school and life. These students were accompanied by their Faculty Members, who visited the institute. Faculty members from IHM Taratala Kolkata curated different aspects of hospitality like no fire cooking, bakery, towel art and preparation of mixed non alcoholic beverages to name a few. On 24.11.25 History was made at IHM Taratala, Kolkata, as the institute celebrated Men’s Day for the very first time. A first amongst the entire IHM fraternity across the country — and it was made truly special by the incredible women of our campus.
Our lady faculty members, staff and students came together to curate a beautifully coordinated celebration that reflected thoughtfulness, respect and team spirit. From planning and cooking a heartfelt lunch for the men on campus, to arranging a cheerful cultural performance — every detail was executed with grace and unity. The afternoon concluded with a warm cake-cutting ceremony dedicated to the men of IHM Taratala, made memorable because of the women who put their love, time and creativity into making this day truly celebratory. It wasn’t just about honouring men — it was about appreciating the women who believe in fostering balance, equality and appreciation in every direction.

The workshop was organised by Taj Bengal, in collaboration with Consulate General of Italy, Kolkata. It further featured an intimate sit-down dinner celebrating the art of contemporary Italian cuisine. To celebrate the Birthday of The tribal Freedom fighter Birsa Munda on November 15, IHM Taratala Kolkata actively participated in the 150th Tribal Pride Day celebrations being held on the 150th Birth Anniversary of Birsa Munda, the Legendary Tribal Freedom Fighter. The Institute paid tribute to Birsa Munda for his significant contribution to the country’s freedom struggle. On 7.11.25, IHM Taratala Kolkata hosted the Eastern Zone edition of Kahin Gum Na Ho jayein National Culinary Competition in collaboration with The NGO Lets Give Back, run by Col. Atul Saxena. The competition was based on the theme – My State on My Plate. Focussing on Lost recipes and the concept of Satvik food which implies – vegetarian food without using onion and garlic. ‘We want the industry to collaborate with us to get more patents’: Raja Sadhukhan
Institute of Hotel Management (IHM) Kolkata has an active innovation and incubation centre which has two patents to it’s credit already and in the process of filing for more this years. Raja Sadhukhan, principal of the institute talks about larger vision of the institute in research and innovation.
The Institute of Hotel Management (IHM) Kolkata has been recognised as the Best Hotel Management College at the 55th annual FHRAI Convention in Bangalore. The institute is not only excelling in academics but also leading in innovation, with its incubation and innovation centre developing patented products for the hospitality industry.
The institute has received two important patents this year and is in the process of filing a few more this year itself.
One of the parents is a charcoal ‘Sandesh’, a highly sought after and delicious sweet delicaculy from West Bengal. The other one is a non-slippery chopping board. The institute is currently working with the industry partners to commercially roll out these items.
Speaking to HospitalityBiz India, Raja Sadhukhan, said, that the long term vision of the incubation and innovation centre is to collaborate with the industry and file at least 100 patents in the next 10 years.
“We are hoping to file at least three more patents this 2025-26 itself,” he said.
“One of our proudest achievements has been the patent for the charcoal Sandesh, a modern take on Bengal’s most loved sweet,” Sadhukhan said. “It is nostalgia wrapped in health. We developed it with two main ingredients—activated charcoal, known for its detoxifying properties, and stevia, a natural plant-based sweetener. This makes the Sandesh safe even for diabetics, while retaining its appeal for everyone.”
“We are now working with leading brands of Bengal, including restaurateur Anjan Chatterjee, to bring this product into the commercial market. The royalty from sales will be reinvested into research, encouraging student-led entrepreneurship,” Sadhukhan added.
Talking about the non-slip chopping board, Sadhukhan said that the innovation prevents the board from sliding on surfaces, eliminating the need for cloth or paper underneath.
“We are currently prototyping it for commercial rollout,” he explained.
Looking ahead, IHM Kolkata is ambitious about intellectual property. “By 2025–26, we plan to file at least five to six patents, and over the next decade, we are aiming for a hundred,” he shared his vision.
He wanted the hotel industry to collaborate and partner with the institute to file for patents of their signature recipes.
The incubation centre also doubles as a platform to support student startups. “Our goal is to ensure that students don’t just secure good placements but also have the opportunity to build their own ventures,” he said adding another aspect to the innovation centre. “We are bringing in mentors from the industry who can guide and even invest in promising student entrepreneurs.”
When asked about the progress of the MoU that National Council of Hotel Management & Catering Technogy – NCHMCT – has signed with major hotel groups a year back, Sadhukhan said that the initiative has started translating into training opportunities, mentorship, and strong placement records of sorts for IHMs.
“Last year alone, more than 600 jobs were offered to our students by nearly 60 companies. With industry participation in our projects and activities, our students are gaining real-world exposure that builds their confidence,” he shared.
When asked about career opportunities and need for sensitisation, Sadhukhan said that tourism is rapidly growing segment of the economy and it is time hospitality became a career of choice for young and aspirational India.

On The occasion of World Tourism Day 2025, celebrated on 27th September, IHM Taratala Kolkata celebrated Durga Puja – inscribed on UNESCO’s Representative List of the Intangible Cultural Heritage of Humanity in 2021, recognizing it as a living tradition of worship and art. The program featured an array of cultural performances by students representative of the lore of the origin of Godess Durga and her many forms. What followed was a traditional Bengali Dhunuchi Nach – a performing art form which is always performed on the occassion of Durga Puja. The program ended with a traditional Bengali lunch. On 25.9.25 IHM Taratala Kolkata conducted a Masterclass and demo on Pan Asian Cuisine with Chef Trainer Samuel Labher at the helm. Chef Labher had recently visited NCHMCT Noida to attend a workshop conducted by NCHMCT on the said cuisine. The session was designed to propagate the learnings of that workshop to the Chef Trainers of IHM Taratala Kolkata. The special focus of the session was sushi and the array of dishes prepared included Asparagus Nigiri sushi, Futo Maki sushi roll, Uramaki sushi, Kanikama Maki sushi, Ebi sushi, Som Tam salad, Lemon garlic steamed fish, Prawn tempura and Egg plant tempura. On 18.9.25, IHM Taratala Kolkata hosted the Prestigious PHD Chamber of Commerce National Young Chef Culinary Competition for East zone. The competition saw participants from institutes of the entire eastern zone including IHM Taratala Kolkata. The event saw eminent personalities of the culinary world as guests and judges including Chef Manjit Gill, President IFCA, Chef Anil Grover, Certified Worldchefs Judge and Founder of Groovy Foods, Chef Kavitha Unni, Executive Sous Chef, Taj Bengal to name a few. The judges were amazed at the creativity of the participants and appreciated the prowess of the students of IHM Taratala Kolkata both as participants and as managers and volunteers in the event for perfect execution – students from IHM Taratala Kolkata, Mr. Aniruddh Mitra and Mr. Dibyashankar Basak winning 1st prize in Eastern region semi finals of the National Young Chef competition. Day 6 of Bridging Campuses at IHM Kolkata with students from IHM Shimla – The team from IHM Shimla started a day long City tour with meaningful heritage stops at points like Jorasanko Thakurbari, Victoria Memorial, Sovabazar Rajbari, Ahiritola Ghat etc – all major tourist spots to experience in first hand what the “City of Joy” has to offer. The team had lunch at the Altair Hotel at Kolkata – a plush outlet with Delectable delicacies. The next day, with memories etched for a lifetime, the team started their journey towards Himachal Pradesh. Day 5 of Bridging Campuses at IHM Kolkata with students from IHM Shimla – The team from IHM Shimla and IHM Kolkata sat down in conference with Dr. Priyadarshan Lakhawat, Director Academics , NCHMCT, Noida for a feedback session. The entire team gave an overwhelmingly positive feedback and agreed upon more such initiatives and collaborations. Further there was a round table meeting with the senior faculty members of IHM Kolkata. In the second half the team was taken to a local sweet factory to experience the manufacturing of Local confectionery along with a visit to Dakshinapan Shopping complex to take in the local arts and handi craft scene. They got a taste of Kolkata Street food while at it. Overall the team appreciated the entire itinerary as it gave a snapshot of the City of Joy. The day ended with a Gala dinner at IHM Kolkata which the students thoroughly enjoyed and appreciated.

Day 4 of Bridging Campuses at IHM Kolkata with students from IHM Shimla – IHM Kolkata collaborated with ITC Royal Bengal and ITC Sonar to conduct a Hotel visit for the team of Faculty members and students from IHM Shimla. They were given exposure to the latest industry standards and practices at ITC Hotels. The presentation was given by Ms. Ritu Jolly, Head of L&D- ITC Sonar and ITC Royal Bengal. Post the visit the students had lunch at Haka, a famous Chinese restaurant known for its specialisation in Kolkata Chinese. Later in the day the students were treated to a film at Cinepolis, Acropolis Mall. It was a fun filled day with varied and enlightening experiences.

Day 3 of Bridging Campuses at IHM Kolkata with students from IHM Shimla – IHM Kolkata collaborated with the team of Faculty and Staff members and students of IHM Shimla to create dishes from Traditional Bengali cuisine The day started with the two teams producing Bengali dishes like Postor bora, Bhetki Paturi, Jhuri alu bhaja, etc. The session was led by Chef Trainers Swarup Saha, Santanu Gain and Aalekhya Adhikary. The Team from IHM Shimla, appreciated the dishes in terms of the complexity of flavours and creativity – thoroughly and commented on the culinary excellence of the dishes. Post which there was a debrief followed with a cultural program where teams from both colleges represented local dance forms and dance dramas. The cultural program was led by Ms Sohini Basu Mukhopadhyay and Ms Mohona Gupta Majumder. It was a showcase of Local art dance and stories of folklore showcasing the best both Himachal and Bengal have to offer.

AIIMS Bhubaneswar invited Honourable Principal Mr. Raja Sadhukhan, as a Lead Trainer to conduct The Rashtriya Karmayogi Large Scale Jan Seva Master Trainers Training Programme between 10th–12th Sept 2025, organised by the Department of Hospital Administration.
The programme was inaugurated by Dr. Ashutosh Biswas, Executive Director, AIIMS Bhubaneswar, in the presence of senior dignitaries.
This 3-day training initiative, conducted under Mission Karmayogi under the Capacity Building Commission, of Government of India, is designed to nurture Seva Bhav (spirit of service), Swadharma (sense of fulfilment & purpose), and promote a citizen-centric governance culture among government officials.
Assisting Mr Raja Sadhukhan (Principal, IHM Kolkata) was Lead Trainer Mr. Gaurav Pandey (Programme Coordinator, Capacity Building Commission).
A total of 34 Master Trainers (including faculty, nursing administrators & senior officials) took part, who will in turn train 2500 staff members of AIIMS Bhubaneswar.

We are proud to celebrate the appointment of Ms Ranju Alex as the new Chief Executive Officer for South Asia, for the Accor Hotels group – a Proud Alumna of IHM Taratala Kolkata class of 1993. Ms. Alex is currently leading operations in countries like India, Bangladesh and Sri Lanka. Ms. Alex is a veteran of the hotel industry and a legendary figure in the field of hospitality with over three decades of experience With a journey starting from IHM Taratala Kolkata. Ms. Alex graduated in the year 1993 and joined The Oberoi Group. The session saw overwhelming response from the students with them lining up to learn from the culinary veteran who has over 47 years of experience in the field. Chef thoroughly appreciated the skills and grooming of the students as well as the hospitality and standards set by IHM Taratala Kolkata. The students thoroughly appreciated the sessions and mentioned new takeaways that they would be applying in their professional life in the future. Grooming and skin care is an integral part of well being of an hospitality professional. Cosmetologists and trainers from Lakme Academy discussed and demonstrated different professional makeup techniques, hairstyles and sari draping techniques along with accessories required to complete the same. IHM Taratala Kolkata has taken a leading role in a city wide sanitation & hygiene initiative in collaboration with the Artemis Fountain Foundation. Through this project, IHM Taratala Kolkata is not only working on creating new technology driven bio-toilets across Kolkata but also actively its invalving its students in the procees. Under the mentorship of Dr, Arijit Banerjee, the “Toilet Man of Bengal” (A Proud Alumnus of IHM Taratala Kolkata) & his team, students regularly attend sessions on the bio-toilet project. These sessions guide them in understanding sanitation challenges, project implementation, and how to approach to different properties to communicate this activity – giving the IHM students real world exposure to CSR practices. Through this project, IHM Kolkata invites organisations to adopt & support the toilet installments ensuring a long term holistic impact for Kolkata & a model that can be replicated across India. On 21.8.25 IHM Taratala Kolkata collaborated with Hangla Hneshel to launch the upcoming Bengali Film “Bela” Directed by Mr Anilava Chatterjee starring Ms Rituparna Sengupta, Mr Biswajit Chakraborty, Mr Bhaswar Chatterjee, Mr Debdut Ghosh to name a few. The star studded evening involved the arrival of the Film director Mr Chatterjee and Film stars Mr Debdut Ghosh and Mr Bhaswar Chatterjee. Honourable Principal Mr Raja Sadhukhan felicitated the film director Mr Chatterjee and introduced the highly coveted Patented Charcoal Sandesh to team Bela and treated Mr Chatterjee with the sandesh. This initiated mass interest in the product. Mr Sadhukhan further declared the name of the sandesh to be “*Bela*” and dedicated the sweet to the film and women empowerment. The theme was “Lights Outfit Laughter” which showcased a carousel of entertaining performances of students of the cultural team. Chef Y.B. Mathur continued the Culinary Economics Workshop at our institute – IHM-Kolkata, focusing today’s training on controls in food businesses. We learnt the controls within the functional departments, such as purchasing, receiving, and storing, as well as those in operational departments. The students learnt the importance of general and food cost controls and the responsibilities of staff. We learnt about the standard cost control tools and different types of controls to respond to the quality and quantity of food. We learnt that controls must be implemented before the start of business operations. Control points are essential guide rails, Chef Mathur taught us.
We learnt the control-related roles of various professionals in a food business.

Chef Y.B. Mathur continued the Culinary Economics training at IHM-Kolkata. Today’s session focused on yield management and maximisation. Chef Mathur also instructed us on how to achieve higher saleable yields.
Chefs must regularly assess the saleable yield and utilise fabricated ingredients and food products efficiently in menu items. Inferences from a Standard Yield Test indicate the profitable use of by-products as well.
The students understood that market disruptions and weather conditions lead to insufficient saleable yields to generate profit from the ingredient. The chef also trained us on the Principles of Yield Maximisation, including tools to achieve the best saleable yield, and explained the red flags that chefs must watch out for.
Through a case study, Chef Mathur trained us on how the standard purchase specifications directly correlate with the standard yield and all Standard Cost Control Tools. We learnt that the quality of the purchased ingredients must be consistent with the desired saleable yield. The standard purchase specifications must be amended if this is not the case.
Saleable and revenue-generating menu items must be produced as by-products of the yield management process.

Culinary Economics Workshop at IHM Kolkata
Chef Y. B. Mathur is camping at the institute to train students in the intricacies of Culinary Economics.
The participants learnt that culinary professionals must improve their financial understanding to advance their careers. The students understood that culinary economics applications must be used to develop new business models. Chefs and businesses can enhance their profits through the clever use of Culinary Economics. We learnt how Culinary Economics is an emerging and robust academic framework for cuisine-led businesses. We also learnt that all culinary businesses are customer-focused. Building customer trust is essential for greater profitability. This can be accomplished through transparent and continually developing operating standards and strategies. Professionals with higher financial literacy are less financially vulnerable, recover from adverse disruptions more quickly, and utilise positive disruptions more efficiently. Culinary economics shows that financial knowledge helps recover from losses and disruptions more easily and quickly, compared to when recovery is difficult.
We learnt about the challenges faced by the food industry, the current Indian food and beverage landscape, and the operations of global food brands, as well as how these brands prepare themselves against negative market disruptions.
Today’s training session concluded with an understanding of how Culinary Economics assists chefs and culinary professionals.

A team of officers led by Ms. Moumita Das, Assistant Director, Consumer Affairs Department, Government of West Bengal delivered an enlightening presentation on consumer affairs and rights. On 15.8.25, IHM Taratala Kolkata celebrated the 79th Independence Day of India at the Institute premises with patriotic fervor. The chief guest of the program was Mr. Pranav Prakash, Deputy Director General and Regional Director (East) India Tourism, Kolkata, Ministry of Tourism Government of India. The program started off with the hoisting of the Tiranga in all its glory – to answer the call of Honourable Prime Minister Shri Narendra Modi ji’s campaign Har Ghar Tiranga. This was followed by a set of patriotic songs by the students and prize distribution for the events held on the occassion of Har Ghar Tiranga. The campus echoed with Patriotic slogans like Jai Hind and Vande Mataram. The event ended with service of Breakfast. The program started off with a welcome address by Honourable Principal Mr Raja Sadhukhan followed by HOD Ms Rita Mitra and the students got introduced to the team of faculty members who would be taking the classes for the new batch.
