This is a part of the Memorandum of Understanding or MoU between IHM Taratala Kolkata and Marriott International. Chef Y.B. Mathur continued the Culinary Economics Workshop at our institute – IHM-Kolkata, focusing today’s training on controls in food businesses. We learnt the controls within the functional departments, such as purchasing, receiving, and storing, as well as those in operational departments. The students learnt the importance of general and food cost controls and the responsibilities of staff. We learnt about the standard cost control tools and different types of controls to respond to the quality and quantity of food. We learnt that controls must be implemented before the start of business operations. Control points are essential guide rails, Chef Mathur taught us.
We learnt the control-related roles of various professionals in a food business.

Chef Y.B. Mathur continued the Culinary Economics training at IHM-Kolkata. Today’s session focused on yield management and maximisation. Chef Mathur also instructed us on how to achieve higher saleable yields.
Chefs must regularly assess the saleable yield and utilise fabricated ingredients and food products efficiently in menu items. Inferences from a Standard Yield Test indicate the profitable use of by-products as well.
The students understood that market disruptions and weather conditions lead to insufficient saleable yields to generate profit from the ingredient. The chef also trained us on the Principles of Yield Maximisation, including tools to achieve the best saleable yield, and explained the red flags that chefs must watch out for.
Through a case study, Chef Mathur trained us on how the standard purchase specifications directly correlate with the standard yield and all Standard Cost Control Tools. We learnt that the quality of the purchased ingredients must be consistent with the desired saleable yield. The standard purchase specifications must be amended if this is not the case.
Saleable and revenue-generating menu items must be produced as by-products of the yield management process.

Culinary Economics Workshop at IHM Kolkata
Chef Y. B. Mathur is camping at the institute to train students in the intricacies of Culinary Economics.
The participants learnt that culinary professionals must improve their financial understanding to advance their careers. The students understood that culinary economics applications must be used to develop new business models. Chefs and businesses can enhance their profits through the clever use of Culinary Economics. We learnt how Culinary Economics is an emerging and robust academic framework for cuisine-led businesses. We also learnt that all culinary businesses are customer-focused. Building customer trust is essential for greater profitability. This can be accomplished through transparent and continually developing operating standards and strategies. Professionals with higher financial literacy are less financially vulnerable, recover from adverse disruptions more quickly, and utilise positive disruptions more efficiently. Culinary economics shows that financial knowledge helps recover from losses and disruptions more easily and quickly, compared to when recovery is difficult.
We learnt about the challenges faced by the food industry, the current Indian food and beverage landscape, and the operations of global food brands, as well as how these brands prepare themselves against negative market disruptions.
Today’s training session concluded with an understanding of how Culinary Economics assists chefs and culinary professionals.

On 15.8.25, IHM Taratala Kolkata celebrated the 79th Independence Day of India at the Institute premises with patriotic fervor. The chief guest of the program was Mr. Pranav Prakash, Deputy Director General and Regional Director (East) India Tourism, Kolkata, Ministry of Tourism Government of India. The program started off with the hoisting of the Tiranga in all its glory – to answer the call of Honourable Prime Minister Shri Narendra Modi ji’s campaign Har Ghar Tiranga. This was followed by a set of patriotic songs by the students and prize distribution for the events held on the occassion of Har Ghar Tiranga. The campus echoed with Patriotic slogans like Jai Hind and Vande Mataram. The event ended with service of Breakfast. The participants were taught various aspects of the service mindset and concept of serving the people of India as a whole. The training conducted by Master Trainers Ms Sohini Basu Mukhopadhyay and Ms Parijat Mukherjee and monitored by lead trainer Honourable Principal Mr Raja Sadhukhan. The training was held under the larger Karmayogi framework of the Capacity Building Commission of the Government of India instilling a culture of excellence and continuous learning within public servants and government officers. From 28.7.25-01.08.25 IHM Taratala Kolkata welcomed the class of 2025-28 through an extensive weeklong induction program. The program started off with a welcome address by Honourable Principal Mr Raja Sadhukhan followed by HOD Ms Rita Mitra and the students got introduced to the team of faculty members who would be taking the classes for the new batch. The event was dotted with a star studded list of eminent speakers including Mr. Shekhar Mukherjee- General Manager Taj Sats Air Catering Limited, Mr. Junaid Majid Sheik, Ms. Ritu Jolly- Head of Learning & Development ITC Sonar & Royal Bengal, and Mr. Sudipta Haldar- Assistant Director Human Resource, Fairfield by Marriott. Mr. Aninda Palit- Director and Co- Owner Savourites Hospitality Pvt. Ltd., Chef Subrata Debnath- Area Director Culinary and Executive Chef- Taj City Centre New Town and Ms. Ishani Priyadarshini- Entrepreneur, Chef & Consultant. The students were briefed on various aspects of the Institute including exams, training and placement, students activity etc. Students were also briefed about the availability of vegetarian option for cookery classes. The latter part of the program included extensive discussions and presentations on the entire course curriculum where individual faculty members briefed the students about various aspects of the subjects. The menu was interestingly explained by Chef Adhikari to the guests and the meal started with prayers to Goddess Annapoorna.
